Single-origin is a term given to coffee that has been sourced from a specific location, such as a farm or region. For example, if a coffee bean originated from one farm in Colombia, then this would be a single-origin coffee.
A blend refers to coffee beans that are put together from different farms or lots and usually happens at a roastery in order to create preferable flavour profiles for consumers. Blends could be coffees from the same country, but will always be different farms, lots, or processes. Single-origin coffee is made up of coffee beans bought from one specific farm or lot.
There are many reasons why you should buy single-origin coffee. One is being that you can learn about your taste and flavour preferences in reference to terroir, farm, process, and country of origin. Once coffee is blended, you might enjoy the overall taste, but it would be very hard to differentiate between the coffees within that blend. More importantly, there may be a flavour or aroma in a blend that you dislike, and it would be hard to know which of the coffees within the blend you are not partial to. With a single-origin coffee, you will know what you like and dislike simply from tasting and smelling it.
